Interesting News

Last night, Jonathan and I were talking about the day Abigail was born.  We don’t ever want to forget the sounds, sights, smells, and emotions we felt on that day.  We’ve been thinking about it lately because she’ll be one year old in 10 days!  Wow.

Anyway, it made me remember a story I read  about a special birthday present a 6 year old boy received.  On his birthday, he opened a 4 ft package, and inside was his dad on leave from his second tour in Iraq.

Speaking of someone hidden inside a box . . . In Germany, a drug dealer escaped from jail by mailing himself in a cardboard box.  The box was about 4×5 ft.  He was picked up by an express courier, and after he was loaded onto the lorry, he cut “a big hole in the tarpaulin of the lorry and jump[ed] off.”  The driver alerted police after he noticed the tarpaulin flapping in the wind.

In other news, a former plastic surgeon had been fueling his cars with the human fat that was sucked from his patients.  This is illegal, at least in California, “because state law forbids the use of human medical waste to power vehicles.”  Huh, ya think!?

Another story is about a man who stole a camera from a woman who has inoperable cancer.  He had a change of heart when he saw the woman’s appeal to return the camera on the news.  She had been taking photos to put in a scrapbook for her kids so they could remember her after she passed away.  A few days after the story aired, the woman received a call from the man, saying he wanted to return the camera.

Ingredient Substitutions

On Valentines Day, I was making a cake for the husband that needed buttermilk.  Well, Abigail was napping, so I couldn’t run to the store at that moment.  So, I checked to see if my Better Homes & Gardens Cook Book had a substitute suggestion for buttermilk.  Hallelujah it did!  So, I thought I’d let y’all in on some quick substitutions:

If you don’t have: Baking Powder, 1 teaspoon
Substitute: 1/2 tsp. cream of tartar + 1/4 tsp. baking soda

Balsamic vinegar, 1 Tbs.
1 TBS. cider vinegar or red wine vinegar + 1/2 tsp. sugar

Bread crumbs, fine dry, 1/4 cup
3/4 cup soft bread crumbs, or 1/4 cup cracker crumbs, or 1/4 cup cornflake crumbs

Broth, beef or chicken, 1 cup
1 tsp. or 1 cube instant beef or chicken bouillon + 1 cup hot water

Butter, 1 cup
1 TBS. shortening + 1/4 tsp salt, if desired

Buttermilk, 1 cup
1 TBS. lemon juice or vinegar + enough milk to make 1 cup (let stand 5 minutes before using) or one cup plain yogurt

Chocolate, semisweet, 1 ounce
3 TBS. semisweet chocolate pieces, or 1 TBS. unsweetened cocoa powder + 2 tsp. sugar and 2 tsp. shortening

Chocolate, sweet baking, 4 ounces
1/4 cup unsweetened cocoa powder + 1/3 cup granulated sugar and 3 TBS. shortening

Chocolate, unsweetened, 1 ounce
3 TBS. Unsweetened cocoa powder + 1 TBS. cooking oil or shortening, melted

Cornstarch, 1 TBS. (for thickening)
2 TBS. all-purpose flour

Corn syrup (light), 1 cup
1 cup granulated sugar + 1/4 cup water

Flour, cake 1 cup
1 cup minus 2TBS all-purpose flour

Garlic, 1 clove
1/2 tsp. bottled minced garlic or 1/8 tsp. garlic powder

Ginger, grated fresh, 1 tsp.
1/4 tsp. ground ginger

Half-and-Half or light cream, 1 cup
1 TBS. melted butter +enough whole milk to make 1 cup

Molasses, 1 cup
1 cup honey

Mustard, dry, 1 tsp.
1 TBS. prepared

Onion, chopped, 1/2 cup
2 TBS. dried minced onion or 1/2 tsp. onion powder

Sour cream, dairy, 1 cup
1 cup plain yogurt

Sugar, granulated, 1 cup
1 cup packed brown sugar or 2 cups sifted powdered sugar

Sugar, brown, 1 cup packed
1 cup granulated sugar plus 2 TBS molasses

Tomato Juice, 1 cup
1/2 cup tomato sauce + 1/2 cup water

Tomato sauce, 2 cups
3/4 cup tomato paste + 1 cup water

Vanilla bean, 1 whole
2 tsp. vanilla extract

Wine, red 1 cup
1 cup beef or chicken broth in savory recipes; cranberry juice in desserts

Wine, white, 1 cup
1 cup chicken broth in savory recipes; apple juice or white grape juice in desserts

Yeast, active dry, 1 package
About 2-1/4 tsp. active dry yeast
